Merry Christmas Eve! By the time this post goes up, I will hopefully be in line at Starbucks where they will have plentiful spinach feta wraps (unlike my birthday). I am so excited to get on the road to Memphis after work! I have an early wake up call to get a quick garage workout in before my day starts.

Today, I’m linking up again for What I Ate Wednesday These are my eats from Tuesday/Christmas Adam (get it?!). It was a random, snacky day ending with a weird omelet.

Breakfast was overnight oats with chia seeds, almond milk & maple syrup.

/home/wpcom/public_html/wp-content/blogs.dir/92c/79404051/files/2014/12/img_3376.jpgAlmonds + TJ’s Inner Beans, a banana, Dove chocolate, Skinny Girl lime+salt popcorn (also had more Inner Beans when I got home:) )

Lunch was a PB + jelly sandwich (forgot my apple, sad day)

And 1,000 of these:

For dinner, I used everything that was left over in the fridge: spinach, ricotta cheese, mozzarella cheese and eggs. I separated a few eggs to just use the whites, and used two whole eggs too. What started like this

Ended like this

My dinner from Monday night was a lot prettier. AND I got to try a new-to-me restaurant that is on my 30 by 30 list! Samurai Sushi was fantastic.

/home/wpcom/public_html/wp-content/blogs.dir/92c/79404051/files/2014/12/img_3369.jpgI had the vegetable roll (I’ll let you guess which one that is). I was so pumped that it had seaweed salad on top.. Brilliant.

Well, I hope everyone has a very Merry Christmas! If you’ll be on the road too, travel safely!

Looks like the party has already started at my parents’ house

/home/wpcom/public_html/wp-content/blogs.dir/92c/79404051/files/2014/12/img_3368.jpgI’m ready to join in the fun!!

Are you traveling for the holiday?

Do you love breakfast for dinner as much as I do??
