white bean + kale soup

Made it back to Nashville this morning with a craving for soup on this cold, rainy Sunday. Plus, I needed to test out my new crockpot I got for Christmas! After browsing through a few recipes, I decided on a white bean and kale soup. I loosely followed this recipe from Epicurious.


I love love love anything with white beans (see?). My mom gave me a few different kinds of Rancho Gordo beans from San Francisco for Christmas (they are the BEST), so I used the flageolets for this soup.There are a bunch of recipes on their website too, and I think I’ll be testing some out soon.DSCN0758 First, I added 2 tbsp olive oil, 2 chopped onions, 4 cloves of minced garlic, and 8 chopped carrots.DSCN0757

Next up, kale (I ripped it up into smaller pieces), the parmesan rind, turkey sausage (sliced and browned), 2 tsp salt, 1 tsp rosemary.


Top it off with 5 cups of chicken broth and 2 quarts of water.


Now, cook yourself!

I set the crockpot on high for about 5 hours. And we wait…

In the mean time, I’ll tell you about my last night of vacation in Memphis. Brent and I met up with a couple friends for a drink at Broadway Pizza (they have the coldest beer in the world, seriously. And wine on tap. Win!). I wasn’t able to go to their wedding this fall (who gets strep throat in their late twenties?!), so it was great to catch up!

IMG_3446 IMG_3448Then, we were off to an engagement party. It was fun meeting Brent’s friends, and, naturally, I forced all of the girls to take pictures and hang out with me. BE MY FRIEND!IMG_3449 IMG_3455 IMG_3456 IMG_3461It was a really fun night! Swanky’s was catered, so I was a happy camper.

While said soup was cooking, I had a late lunch… English muffin pizza!! Doesn’t get better than that.IMG_3462I realized I bought way too much kale for the soup (not a bad problem to have), so I made some parmesan kale chips to munch on before dinner.DSCN0763 DSCN0768Parmesan is apparently the theme tonight. I don’t hate it. Soup was served up with (you guessed it), PARMESAN toast. So delicious, and I love all the colors in the soup. DSCN0769 DSCN0770The toast was a great addition. I can’t wait to eat this every day this week… I could probably fill up a bathtub with the leftovers.. that would be the greatest bath ever.
