healthy chili recipe for the Puppy Bowl

Hi! Hope you had a wonderful weekend! This weekend has been busy (probably because I worked on Saturday), but it’s been fun too, starting with my first-ever blogger meet-up!! Thursday night commenced the first Nashville Fitness Bloggers Club meeting. I met up with Mary and Jennifer for some beverages at No. 308 in East Nashville (great suggestion, Mary!). I have been following both of their blogs for awhile now, and it was so great to meet them in person!


I had so much fun with this amazing ladies. We had a blast chatting away about running (ummm..they are super fast runners), blogging and FOOD (seriously, Mary’s homemade bread and Jennifer’s baked treats have me drooling on my computer when I read their blogs). One of the main draws about starting a blog for me was because of the blogging community, and I can’t wait for our next get-together. Yay for blends! (blog friends…oh yeah.)

Friday morning, I started my day with this yoga video from Karena & Katrina:

Brent was back in town from a work trip Friday, and we kept it low-key and watched the movie Fargo. It was on my 30 before 30 list… it definitely kept my interest, but lots of blood, ick! Made some homemade frozen yogurt for the movie, too! Frozen bananas, chocolate protein powder, PB2, almond milk and topped with shredded coconut and shaved dark chocolate. I had to put on an extra sweatshirt, huddle up in a blanket and pull up the space heater to eat the fro-yo, but it was totally worth it.


I called it an early night, since I woke up early Saturday to get in Workout #2 from the Winter Shape Up series. It was only 21 minutes long, but it wore my butt out! Darn those plie squat jumps. At least I had a nice sunrise heading to work!


Saturday evening was almost as wild as Friday night. After a Saturday evening church service, Brent and I swung by Whole Foods to pick up dinner. I was craving sushi and went with a brown rice tuna and avocado roll with a seaweed salad.



Because it’s really the best part of Super Bowl Sunday. Kitty Perry even made an appearance.


Started off my February with a new chili recipe! After spending an hour at Kroger (I was deciding on snacks for my Girls on the Run team… it’s a process), I came home and started chopping up the world’s largest butternut squash. My roommate Tina caught all the action for you guys…


You do this on Sunday mornings too, right? My hobo chic look was on point this morning.

To energize myself for all the chopping, I tried this iced coffee K-Cup I got from work.


How do you make iced coffee with a Keurig? Do what you normally do, except have a cup of ice as the coffee receptacle. I can’t believe I had to Google that…

Slow Cooker Butternut Squash and Quinoa Chili

There are SO many lovely, colorful veggies in this chili! A healthy chili for the Super Bowl and perfect on a cold, rainy day. I saw several butternut squash chili recipes online and ended up just doing my own thing.


  • 1 butternut squash (cubed)
  • 1 package ground turkey (I used 93% lean)
  • 2 zucchinis
  • 1 yellow pepper
  • 3 Roma tomatoes
  • 1 bag raw spinach
  • 1 cup cooked quinoa (I had leftover quinoa from last week, but you could use uncooked and just add it earlier with the first ingredients)
  • 3 cloves garlic, minced
  • 1/2 chopped onion
  • 1 jar Newman’s Own marinara sauce
  • 32oz lower-sodium chicken broth
  • 1 can kidney beans
  • 1 can black beans
  • any spices you like! I used garlic powder, onion powder, nutmeg, salt, and cayenne pepper

In a pan, I added the chopped onion and garlic and browned the turkey.


While browning the turkey, I added all the veggies (except the spinach) to the slow cooker.


Next, add the beans, turkey/onions/garlic. I drained the beans to get a thicker chili.


Add the chicken broth, marinara and spices


Set on High for about 4 hours, then add the spinach and cooked quinoa. Set to low or warm until spinach wilts.

How cute is my spoon rest? My mom gave it to me for Christmas a couple years ago, and it looks just like my dog Holly (except she has blue eyes)!


The iced coffee I had was good for the first few sips (it was really sweet) but then got watered down really quickly, so I brewed a hot cup while I finished up my cooking for the week! My Pumpkin Spice coffee stash is almost gone now that it’s February, thank goodness. Now you must endure another K-Cup joke. I’m sorry, I just can’t help myself.


Brunch time!

I was so excited that two of my good friends, Robyn and Jake, from Memphis were in Nashville this weekend! Robyn and I were in PT school together and worked together for 2 years at a hospital in Memphis after graduating; I miss seeing her every day! Robyn also went to high school with Brent (small world), so Jake was the odd man out (kidding, we love Jake and he’s an awesome runner).



We met at Germantown Cafe for brunch (a restaurant on my 30 before 30 list!), and I love it! I had coffee and the salmon club (salmon BLT with spicy avocado spread, YUM!) and swapped fresh fruit for the hash browns. It was a pretty light sandwich which was good because 1. Super Bowl snacks coming (see below) and 2. Robyn and I didn’t stop talking for one second during brunch.. we had a ton to catch up on! :)

Soooo, about those Super Bowl snacks…

I wanted to prepare some healthy snacks (imagine that…) to watch during the Super Bowl before serving my chili. For my 2-person Super Bowl party (see above pictures for proof that I have other friends), I made sweet potato fries and guacamole dip with pita crisps and baby carrots. Ok, fine, the guac is Wholly Guacamole, but I did chop up a tomato to add to it!


I cut up the sweet potatoes into fry-like shapes then tossed them in olive oil and Sonny Salt. Roasted for about 20 minutes or so at 450*.


Served with ketchup and BBQ sauce (Baby Ray’s, duh).
